Here’s one of everyone’s favorites (especially now that cooler temps have prevailed). It’s EASY,
VERY AFFORDABLE AND CAN FEED THE ENTIRE FAMILY! Goes well with sandwiches too!
GREEN PEA SOUP (WITH OR/WITHOUT HAM)
Chop leftover slices of ham from Thanksgiving or Christmas into small diced pieces
Chop half cup of onion
Chop half cup of green pepper
Chopped garlic (teaspoon)
Skin of two regular sized carrots
Dice into small slices
Two tablespoons olive oil
Allow the vegetables to brown somewhat in the olive oil (about ten minutes)
Add one full bag of split green peas
Then add two cups of water and stir repeatedly as the soup forms
Continue to add water as this cooks — the green peas will absorb water so repeat adding so it doesn’t burn.
In about an hour and a half, you’ll have a creamy and delicious soup for the entire family!
Salt, pepper and garlic again (this keeps colds away)
